Summer vacation is around the corner, and with summer comes a new and exciting palate of flavors in the kitchen. Arriving home after a long, tiring week of of school on a Friday afternoon means two things- happiness and hunger. After rummaging through the cabinets and the fridge, I decided to try out a new recipe for Mango Avocado Yogurt Dip. This snack is not only healthy and delicious, but also incredibly simple. So, if you are feeling adventurous and want to try out something new, here is how you can make it:
1 cup of plain Greek yogurt
1 whole mango (or pre-sliced mango)
1 whole avocado
1 jalapeño pepper (this is optional, it adds a little spice)
A drizzle of olive oil
1/2-1 Tbsp salt
A sprinkle of pepper
1 bag of corn chips
First, scoop the yogurt into a bowl and spread it evenly across the bottom, so it is somewhat flat. Next, slice up the mango and avocado into cubes, and spread these cubes over the yogurt. Then take the jalapeño and slice it up into the smallest pieces possible, you probably would not want to end up biting down on a large chunk of this. Slice your lime in half and squeeze the juice over the bowl. Add a drizzle of olive oil over the surface of your dip. Finally, sprinkle your salt and pepper over the bowl.
All there is left to do is grab your bag of chips, kick your feet up, and enjoy.
